Sheet Pan Roasted Salmon and Apples

This is the recipe that made me fall in love with sheet pan cooking. Thanks to the sheet pan, this salmon can be easily and perfectly cooked and is so adaptable to a variety of flavors and vegetables.

  • 2 pounds boneless Norwegian salmon filet, skin on
  • 1 medium white onion, thinly sliced
  • 1 red apple, sliced
  • 1 yellow apple, sliced
  • 2 tablespoons chili crisp, less if a more mild meal is desired
  • 2 tablespoons vegetable oil
  • ½ cup brown sugar, packed
  • 1 teaspoon kosher salt
  • ½ teaspoon cracked pepper

Preparation

Preheat the oven to 425°F. Prepare a rimmed sheet pan (13” x 18”) by spraying with nonstick cooking spray.

In a small mixing bowl, combine chili crisp, brown sugar, vegetable oil, salt, and pepper. Arrange sliced apples and onions in a single layer across the sheet pan. Place the salmon atop the apples and onions and brush with the chili crisp mixture.

Roast for 20-25 minutes or until the salmon is cooked to your desired doneness. To test the doneness, cut into the thickest part of the salmon. If it easily flakes and has turned from translucent to opaque, it is done.

Serve the salmon and apples over rice or with a green salad.
