Ingredients
Tonic
- 3 cups water
- 28 grams cinchona bark
- 62 grams citric acid
- 11 grams lime peel
- 14 grams lemon peel
- 14 grams orange peel
- 4 allspice berries
- 3 cardamom pods
- 2 grams lavender
- 3 grams kosher salt
Simple Syrup
- 2 cups sugar
- 1 cups water
Preparation
METHOD
To prepare the tonic, combine all of the “tonic ingredients” in a lidded 2-quart glass jar. Store the jarred water and tonic ingredients in the refrigerator for three days, stirring once daily.
On day 3, strain the tonic through a fine mesh sieve.
Prepare the simple syrup by combining sugar and water in a small saucepan over medium/medium-high flame. Heat the simple syrup mixture until the sugar dissolves. Once dissolved, let the syrup cool completely and then add the syrup to the tonic and enjoy.
