I have a crush on a cruffin. A cross between a croissant and a muffin, this pastry is so incredibly delicious with its creamy filling that’s sweet and smooth but not over-the-top sugary, that flaky and buttery crust, plus a fluffy meringue top. These love-at-first-taste treats are the concoctions of husband and wife team Aaron and Rhonda Smith of Oklahoma’s local Signature Bakery.

“We were getting married on a budget,” says Aaron Smith, “I decided to make the food and wedding cake. Everyone loved the cake. I didn’t get a piece, but the idea of starting a bakery business was birthed by our wedding cake.”

Soon after, they began experimenting with different recipes and techniques, aided by YouTube and lots of books. Through trial and error, they created some baked goods they knew to be truly exceptional.

“I’m most proud of the croissants, I’ve been working at viennoiserie for about three years now. Croissants take three days to make,” says Aaron. “Day 1, mix dough; Day 2, laminate; Day 3, proof and bake.”

It’s been an interesting year to navigate for many small businesses across Oklahoma and the nation, but Aaron says the way the community in Oklahoma has come together to help support many local businesses has been a game changer for their small business. The ingenuity of the Farmer’s Market managers in particular has been helpful.
