Ingredients

  • 6 russet potatoes, peeled
  • 3 eggs, hard-boiled
  • 2 tablespoons granulated sugar
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet relish
  • ½ cup white onion minced
  • 1 tablespoon dill relish
  • ½ cup of mayonnaise (or Vegan substitute)

Preparation

Bring a large pot of water to boil on the stove. While the water is heating, peel the potatoes and set aside. Next, combine sugar, yellow mustard, sweet relish, minced onion, dill relish, and mayonnaise (or vegan substitute) in a large bowl.

Once the water is boiling, add the potatoes, allow the water to return to a boil, and cook the potatoes for 4 minutes. Check the potatoes after 4 minutes by piercing one with a fork. If the fork easily pierces the potato, remove them from the hot water to cool. Chop into 1-inch cubes and set aside.

Place the eggs in a medium saucepan, cover with cold water, and bring to a boil. Allow the eggs to boil for 10 minutes. Once they are done, transfer the eggs to cold water for 5 minutes. Next, peel and quarter the eggs.

Add all ingredients to the large bowl and stir to combine.
