- equal parts watermelon juice to pomegranate juice
Preparation
I take the meat from one small seedless watermelon and run it through my food processor until it liquifies. If you own a juicer, then even better! Pour the juice through a fine mesh strainer with a bowl underneath to collect the pulp and any seeds that may have made it through in your “seedless” melon. Mix equal parts watermelon juice to pomegranate juice and store in an airtight container in the fridge. When ready serve, pour the juice over ice. Garnish with fresh pomegranate seeds and fresh mint sprigs.
For the cocktail side, play around with it Mojito style with rum, lime juice, simple syrup and mint. Top with club soda!
