- ¼ cup dry lentils
- 1 cup arugula and spinach mix
- ¼ cup sun-dried tomatoes
- 4-5 grape tomatoes
- 1 tablespoon goat cheese optional, or vegan cheese crumbles
- 3 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar
- 2 tablespoons agave syrup
- 2 teaspoons ground turmeric
- ½ teaspoons ground ginger
Preparation
Cook the lentils according to directions. Top the arugula and spinach mix with sun-dried tomatoes, grape tomatoes, goat cheese. Mix together the oil, vinegar, agave, turmeric, and ginger. Drizzle over salad and enjoy!
