- 2 ounces mezcal
- 1 ounce pineapple juice (fresh pressed in best)
- ½ ounce lime juice
- ½ ounce agave nectar
- 2 dashes of Dram Apothecary Palo Santo Bitters
- egg white
Preparation
Add all of the ingredients to a shaker and dry shake (no ice) for about 20 seconds. Add ice and shake for another 15 seconds. Carefully strain into a chilled coupe or lowball glass. Garnish with a piece of dried pineapple.
