Pimm's Cup Cocktail

Ah, the Pimm’s Cup cocktail! Pimm’s No. 1, an English in origin liqueur, found its beginnings in 1860’s England as a “digestive aide”. Amber red in color, gin based, and infused with flavors of caramelized orange, spices and herbs, a Pimm’s Cup cocktail makes fantastic summertime sips. It also ticks the boxes of many home gardeners during the summer months!

Ingredients

SERVINGS: Makes 2
  • 2-3 Persian cucumbers or mini cucumbers, sliced thinly lengthwise
  • Valencia orange, sliced thin with the rind
  • ¾ cup Pimm's No. 1
  • 4 fresh Oklahoma strawberries, halved or quartered
  • ginger beer or ginger ale (hard lemonade or regular lemonade are also good)
  • large sprigs of fresh mint
  • club soda, optional

Preparation

In a large shaker add 3 thin slices of Persian cucumber and a slice of orange. Muddle together. Add Pimm’s No. 1 liqueur, plenty of ice, and shake like hell.

Fill two tall glass with ice and layered slices of cucumber, orange, along with a strawberry or three. Strain the Pimm’s, in equal parts, into the glasses. Top with ginger beer or ginger ale. If adding hard lemonade or regular lemonade, float with club soda. Garnish heavily with stems of fresh mint. (The mint that you planted years ago and everyone told you would never go away and would grow everywhere.) Cheers!
