Mezcal Negroni

The Bartender: Some brilliant but unknown bartender who at some point thought, what if I make a classic bitter negroni, but with robust and smoky mezcal instead of floral and botanical gin? Use a joven, or clear and unaged mezcal. Fresh, quality vermouth is key. Ditch the bottle that’s been sitting on your bar cart for two years and start anew.

Ingredients

  • 1 ounce Illegal joven mezcal
  • 1 ounce Campari
  • 1 ounce Cocchi sweet vermouth

Preparation

Stir all ingredients with ice until chilled. Strain into a rocks glass with fresh ice. Garnish with an orange peel. Finally, put that vermouth back in your fridge. Always store your vermouth in the fridge. It’s happier making friends with the carton of milk and that half-empty jar of salsa. It keeps for about two months and is versatile for a lot of cocktails or even just sipping neat after dinner.
