Ingredients
- 4 cups whole milk
- 1 cup vegetable oil
- 1 cup granulated sugar
- 5 teaspoons active dry yeast
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon salt
- 9 cups all-purpose flour
- 2 sticks butter, melted
- 2 tablespoons ground cinnamon
- 2¼ cups brown sugar
- 5 cups powdered sugar
- ½ cup whole milk (or more as needed)
Preparation
Dough: Heat milk, vegetable oil, and sugar in a saucepan over medium heat until mixture is lukewarm. Set aside. In a stand mixer with dough hook, mix together yeast, baking soda, baking powder, and salt. Pour the milk mixture over the yeast and let sit 5 minutes. Mix in 4 cups of flour. Slowly add the rest of the flour and knead on low speed until dough doesn’t stick to sides anymore and forms a ball. Cover dough with a kitchen towel and let rise for 2 hours. (It will rise real nice and puffy!)
Filling: Preheat oven to 350 degrees Fahrenheit. Mix cinnamon and brown sugar. Once dough has risen, remove half and place on a floured surface. Roll the dough into a long rectangle, about 30x10 inches. Pour half of the butter on the dough, spread to one inch of the edge. Sprinkle one heaping cup brown sugar and cinnamon mixture over butter and spread with a spatula. Starting with the longest side, roll the dough into a log, keeping it tight. With a sharp knife, cut the log into ½” slices. Repeat with other half of dough. Each log will make 20-25 cinnamon rolls. Spray your desired baking dishes lightly with nonstick cooking spray. (two 9x13 inch pans and one 8x8 inch pan work for me!) Place cinnamon rolls into baking dishes, cover with a towel, and let rise for 18-20 minutes. Bake for 18-20 minutes.
Glaze: In a medium size bowl, mix powdered sugar and milk. Drizzle cinnamon rolls immediately out of the oven with glaze.
