Ginger Apple Cider Shrub

A shrub is an acidic syrup usually sweetened with fruit. Herbs can be added as well to bring another dimension to the shrub. Vinegar’s acid cuts and complements the sweetness of the fruit syrup, imparts its own flavor, and even provides health benefits! It will add depth to your drink, and the combinations of ingredients are endless. Try experimenting with different vinegars, fruits, and herbs.

Ingredients

SERVINGS: 2 Cup(s)
  • 1 cup apple cider vinegar
  • 1 cup of water
  • 1 knob of ginger, peeled and chopped
  • 2 honeycrisp apples, diced
  • 1 cup sugar

Preparation

Combine sugar and water. Heat mixture over medium and add chopped apples and ginger. Bring to a simmer and add apple cider vinegar. Continue to gently simmer for roughly ten minutes. Cool, add to the container and refrigerate for 2-3 days. To serve, add 3 ounces shrub to a pint of cold sparkling water with fresh ice, adjusting for taste.
