This drink is like the love child of a daiquiri and an espresso martini. Daiquiris and coffee are some of our absolute favorite things, and this tipple combines the two and proves that sometimes good + good = more gooder. Enjoy :)

Ingredients

  • 2 ounces rum, white or aged
  • ¾ ounce rich cane simple syrup (200g cane sugar, 100g water, simmered and stirred until all sugar has dissolved)
  • 1 ounce lime juice, fresh squeezed
  • 1 teaspoon instant coffee powder (finely ground)
  • 3-4 drops saline solution (or a tiny pinch of sea salt)

Preparation

METHOD

In a cocktail shaker, add 2 oz white rum + 1 heaping teaspoon of instant coffee. Swirl or stir to combine and dissolve. Add remaining ingredients to the shaker and fill with ice. Shake vigorously for 10-15 seconds, and pour through a fine strainer (to remove any remaining coffee particles) into a chilled cocktail glass.
