Ingredients

  • Soaked Gummy Worms
  • 8-10 gummy worms
  • ¼ cup amaretto
Dessert Base
  • 8 chocolate wafer cookies, roughly chopped
  • 1½ cup whole milk
  • 3 egg yolks
  • 3 tablespoons cornstarch
  • ½ teaspoon kosher salt
  • ¼ cup granulated sugar
  • 1 shot espresso or 1 tablespoon espresso powder
  • 1¼ cup 60% cacao, chopped
  • ½ stick butter
Ganache
  • ¾ cup whipping cream
  • 1 cup 60% cacao chocolate, roughly chopped
  • 1 tablespoon butter, room temperature
  • ¼ cup amaretto
Whipped Cream
  • 1½ cup heavy whipping cream
  • 1 tablespoon vanilla bean paste or vanilla extract
  • ¼ cup powdered sugar

Preparation

Add gummies & amaretto in sealable container. Set aside and allow to soak for at least 4 hours or up to overnight.

Dessert Base

Mix chopped chocolate wafers with a pinch of salt and 1 Tbsp butter. Mix until incorporated and equally divide between glasses. Press cookie mixture down in glass. Place glasses on baking sheet and set aside.

Place next 6 ingredients into saucepan over medium-high heat. Whisk until incorporated, and once liquid base is warm, add chocolate. Constantly whisk until thick and shiny. Add butter and strain into a large, pourable container. Divide hot mixture equally between glasses, and place in freezer to set up.

Ganache

Place whipping cream into microwave safe bowl or clean saucepan. Heat until steaming, but not boiling. Remove from heat, and add chocolate. Let sit for 3-5 minutes. Whisk until blended and shiny. Add butter in pieces then add amaretto. Mix until combined and equally divide between glasses. Place back in freezer to set up.

Whipped Cream

Combine ingredients and whisk until medium peaks. Divide between glasses. Garnish with chopped chocolate wafers and shaved chocolate. Finish with amaretto soaked gummy worms.
