May is like the calm before the vegetal storm that rolls in with the month of June. It’s still cool enough to grow cool weather crops, such as greens and cabbage and it’s also the only time of year you can find berries (by the way, if you haven’t had strawberries grown at Jesko Farms in Yukon, make a note to do so right this minute). June offers the perfect combination of cool nights and warm days, yielding the summer crops that Oklahoma knows well: squash, tomatoes, cucumbers, melons, beets, okra, peppers, eggplant, and more.
