Bud's Bourbon Street Fried Turkey Dinner

Ingredients

SERVINGS: Feeds 5 Hungry Firemen
  • 3 gallons of peanut oil
  • 1-12 pound turkey
  • Cajun Seasoning “Not sure about the amounts because I just add until it tastes right.”
  • paprika, kosher salt, garlic powder, ground black pepper. onion powder, dried oregano, cayenne thyme, sugar and a little nutmeg
Brine
  • 2 gallons of water
  • 2 cups kosher salt
  • 1 cup brown sugar
  • 1/4 cup paprika
  • 1/4 cup chili powder
  • 2 tablespoons of onion powder
  • 2 tablespoons of garlic powder
  • 2 teaspoons of cayenne
  • 1 teaspoon red pepper flakes
Original Caesar Salad
  • 2 garlic cloves
  • 4 anchovy fillets
  • 1 teaspoon salt
  • 2 teaspoons ground pepper
  • juice of a lemon
  • 1 teaspoon of Worcestershire sauce
  • 1 teaspoon of yellow mustard
  • 2 egg whites
  • 1/2 cup of extra virgin olive oil
  • 1/2 cup of grated parmesan
  • head romaine lettuce, cleaned and chopped
Maddi's Firehouse Croutons
  • cubed leftover bread
  • olive oil
  • favorite seasonings
Twice Baked Potatoes
  • 4 large potatoes
  • 12 slices of bacon
  • 1 cup sour cream
  • 4 tablespoons butter
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 1 tbsp Ranch dressing mix
  • 1 cup grated cheddar
  • 10 green onions, sliced

Preparation

Bud's Bourbon Street Fried Turkey Dinner

Place all ingredients, except turkey, into a large pot to dissolve. Place in refrigerator to cool down. Add turkey to a container large enough to hold the bird and the brine, cover, and refrigerate for 8-18 hours. Remove turkey from brine, rinse and pat dry, apply rub inside and outside of bird. Heat oil to 375 degrees Fahrenheit, using all frying precautions, and cook 3 minutes per pound. Let rest 15-20 minutes before carving.

Original Caesar Salad

Mix all ingredients except egg whites. Let sit for 20 minutes to infuse oil. Whisk in egg whites. Add lettuce, cheese, and Maddi's Croutons.

Maddi's Firehouse Croutons

Preheat oven to 350 degrees Fahrenheit. Mix bread, seasonings, and oil in a bowl. Spread onto sheet pan. Place in oven and reduce heat to 150. Can be cooked up to 24 hours.

Twice Baked Potatoes

Bake potatoes at 350 degrees Fahrenheit for 1 to 1.5 hours. Cook bacon and crumble. Let potatoes cool. Cut in half lengthwise. Scoop out the insides into a bowl. Mix sour cream, milk, butter, and spices, half the cheese, and half the green onions until creamy. Spoon back into the potato skins. Top with remaining cheese, green onions, and bacon. Bake for another 15-20 minutes.
