Quincy Bake Shop’s dazzling pastry case is poised for expansion
Audrey Hepburn’s incarnation of Holly Golightly would look perfectly at home sauntering up to the gleaming pastry counter at Quincy Bake Shop. Delicate danishes, chocolate babkas, macarons, and tea cakes tempt and dazzle under a row of chandeliers in the cafe at The Bradford House, a stylish boutique hotel off Classen Boulevard where Quincy makes its home.
Founded by pastry chef Trisha O’Donoghue and named after her favorite Chicago train stop, Quincy Bake Shop touts some of the most elevated, beloved, and beautiful confections in Oklahoma, including high-end, multi-tiered cakes.
After several years working in some of Chicago’s best bakeries and kitchens, including Cafe Selmarie and Lovely, Too, O’Donoghue moved back to Oklahoma to be closer to family. She began selling birthday cakes from home during the pandemic, but she rapidly expanded into The Bradford House’s 600-square-foot basement kitchen with the help of family and friends.
“We’re working out of two ovens, three fridges, and two freezers,” O’Donoghue says. “We have six employees plus me. Fitting that many people and turning product out in a small space can be tricky.”
But Quincy Bake Shop’s staff makes it work. They serve eight wholesale clients, bake custom orders, and serve the Bradford House clientele. You can find their confections at Paseo’s Flora Bodega, Prelude Coffee Roasters at the 8th Street Market, and Norman’s Press and Plow, among others. The effort is substantial, but Quincy allows Trisha to give her employees and herself the flexibility that life requires.
Quincy’s menu changes weekly, focusing on the seasons, but favorites like danishes and triple-cheese and chocolate croissants are mainstays. Custom requests are also available for pre-order through its website.
Lucky for Trisha and her fans, an expansion is in the works. A second retail location will open this year — and, yes, it will have a larger kitchen.
