Ingredients

SERVINGS: Makes 12
  • 550 grams all-purpose flour — I used Bob’s
  • Red Mill gluten-free flour
  • 15 grams baking powder
  • 225 grams applesauce (or 2 apples, peeled and blended to a purée)
  • 60 grams cream cheese or cashew cheese
  • 267 grams water
  • Spring onions, sliced on a diagonal

Preparation

Preheat the oven to 400 degrees Fahrenheit.

Combine flour and baking powder in a bowl and stir to combine. Add the applesauce or puréed apples to the flour, pressing it into the flour to combine until the mixture resembles peas. Next, blend your cream cheese or cashew cheese with water. Add the liquid to the flour mixture, stirring until just incorporated. Fold the sliced green onions into the batter.

Place the dough onto a lightly floured surface and pat into a circle that is about ½ inch thick. Cut biscuits using a biscuit cutter, ring mold, or the rim of a glass — I find that a lowball glass creates the perfect size for my preference. If using a glass, dip the rim in flour before cutting your biscuits.

Place the cut biscuits on a parchment-lined baking sheet in a 400 degree Fahrenheit oven and bake for 12 minutes.
