Ingredients
- 2-bone Berkshire pork chop from Kamp's. It should weigh about 1½ pounds.
Preparation
24 hours before cooking, rub the entire pork chop with Kosher salt and Hasty-Bake Greek Seasoning and place in refrigerator.
2 hours prior to cooking, remove pork chop from refrigerator and allow to come to room temperature.
Place the pork chop on grill for indirect heat. Grill for roughly 1 hour, or until internal temperature of pork chop reaches 145 degrees.
Once temperature is roughly 145 degrees, move the chop directly over the charcoal to sear each side. Sear each side for 3-4 minutes.
Remove chop from grill, let rest at least 15 minutes, and you are good to go!!
