BBQ is a classic summer staple. Unfortunately, it’s also an unhealthy dish, thanks to the excessive amounts of saturated fats and cholesterol in the pork, topped off with a sugar-laden sauce. The good news is that by changing the base of the BBQ from meat to jackfruit, you can opt for a low-fat, cholesterol-free, and high-fiber food without sacrificing taste or texture!

Jackfruit is a large Asian tree fruit of the fig and mulberry family. When pulled apart, the flesh of the fruit has the consistency of pulled pork. Jackfruit naturally adopts the flavor of its seasoning, which renders it an ideal candidate for a plant-based meat substitute. This jackfruit BBQ sandwich pairs perfectly with homemade broccoli avocado slaw and a side of spicy sweet potato wedges to make a balanced, nutrient-rich summer meal!
