In a mixing pitcher, muddle persimmon slices, maple syrup, and bitters. Add bourbon and fill with ice. Stir vigorously with a bar spoon until very cold. Strain into two ice-filled old-fashioned glasses. Rub the orange peel on the rim of the glass, rock it back and forth over the drink, and drop it in. Do the same with the remaining glass.

  • 4 ounces bourbon
  • 2 slices of ripe persimmon
  • 2 teaspoons barrel-aged maple syrup
  • 2 strips of orange peel
  • 8 dashes citrus bitters
