- 1 ounce palm sugar simple syrup
- 1 ounce lime juice
- 2 ounce white rum
- 1/2 ounce egg white
Palm Sugar Simple Syrup
You should be able to find a slab of palm sugar at your local Asian market. Chop off a chunk of sugar measuring about 1 cup and add it to a saucepan with 1 cup of water. (Be sure to break off a little piece to try on its own, it’s delicious!) Over medium heat dissolve the palm sugar in water. Once the sugar has dissolved, remove the pan from heat and allow to cool.
In a shaker (no ice yet) add the ingredients for your cocktail of choice. Shake vigorously for about a minute to get egg frothy without diluting your drink. Next, open up shaker and add ice, replacing the lid to shake until it feels really cold and the shaker begins to get frosty. Strain into a small glass and garnish.
