- Betty Crocker GF Sugar Cookie Mix
- Cream Cheese Frosting
- Strawberries, thinly sliced
- 2-3 Kiwi, peeled & sliced
Make cookie mix according to package directions. cover dough with plastic wrap and leave it alone for 30 minutes. (This helps the xanthan gum do its job and will help keep your giant cookie from becoming flat) Go make your frosting!
Frosting: (Adapted by me from Food Network Kitchen recipe)
5 ounces unsalted butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar
1.5 teaspoons vanilla extract (Watkins brand is my personal favorite)
Beat butter and cream cheese until combined. Slowly add the powdered sugar about 1/4 cup at a time until smooth. Add vanilla and beat to combine. Add a splash of milk or melted butter if it becomes too thick or stiff. You want it to be easily spreadable.
Place your dough on a twelve-inch pizza pan and press down until it becomes a large disc, roughly 1/4-1/2 inch thick. Bake according to package directions adding extra time to allow the center to bake until a toothpick comes out clean. Remove from oven and cool until pan is room temperature. This is imperative! If you try to mess with the cookie before it’s completely cool, it will crumble.
Once your base cookie is cool, transfer it to a plate or platter and frost it with your amazingly smooth homemade frosting. Use a pizza wheel to slice up your cookie like a pizza. (Do this before you add the fruit! Trust me!) Now gather your fruit and arrange it on the “pizza” as you’d like. Place toothpicks around the “pizza”, cover with foil or plastic wrap to allow for mess free transport to your party. BOOM!
