- 1 package frozen puff pastry, thawed
- 1 bunch small to medium fresh asparagus, with bottoms trimmed
- 6-8 ounces Brie, sliced into 1½ to 2 ounce slices
- 5 sprigs fresh thyme
- kosher salt & pepper to taste
- 3 tablespoons honey
- 3 tablespoons butter
Preheat oven to 450 degrees Fahrenheit. Cut the puff pastry sheets into 5 squares and equally divide the asparagus between them.
Place sliced brie over asparagus, add fresh thyme leaves and salt & pepper. Fold the pastry like an envelope and seal the edge with water. Place in freezer for 30 minutes. Take out of freezer and bake for 20 minutes or until golden brown and puffed. Melt butter and whisk in honey until combined. Drizzle hot pastries with honey butter and garnish with remaining fresh thyme.
