More than hastily sipped morning fuel, carefully crafted coffee yearns to be sipped slowly and enjoyed. The flavors and aromas should be scrutinized, examined, and celebrated. Is that a bit of raspberry? No, blackberry. Yes, a hint of ash in the aroma, must have been cultivated in volcanic soil. Use this wheel as a reference the next time you sip your favorite brew (we suggest enjoying one of the local roasters mentioned in this issue). Let your cup rest a little—piping hot coffee needs time to cool slightly to allow the full notes of flavor to surface and permeate. Now, take a sip. Let the coffee linger, let it travel to the back of the tongue. Allow the tasting wheel to guide you towards finding what you prefer in a coffee and give you the language to describe it.
